Jambalaya Meal Prep Bowls
Ingredients:
1 pound chicken breast, diced
1 pound shrimp, peeled and deveined
2 cups cooked brown rice
1 bell pepper, diced
1 onion, diced
2 celery stalks, diced
2 cups low-sodium chicken broth
1 can diced tomatoes
2 teaspoons Cajun seasoning
Instructions:
Heat a large skillet over medium heat and sauté chicken until cooked through. Remove and set aside.
Add bell pepper, onion, and celery to the skillet and cook until softened.
Stir in chicken broth, tomatoes, Cajun seasoning, and cooked rice. Simmer for 10 minutes.
Add shrimp and cook until pink. Portion into meal prep containers.
Southern Blackened Salmon
Ingredients:
4 salmon fillets
2 tablespoons Cajun seasoning
1 tablespoon olive oil
4 cups roasted vegetables (your choice)
Instructions:
Rub salmon fillets with Cajun seasoning.
Heat olive oil in a skillet over medium-high heat. Cook salmon for 3-4 minutes per side.
Divide salmon and roasted vegetables into meal prep containers.
